The SIM Health Muffins

First off, you have three options for this recipe: they are 1. Bran Muffin 2. Banana Muffin 3. Blueberry muffin. Personally? I’d opt for option 2 or 3, but it’s entirely up to you. Last but not least, the SIM recipe replaces sour cream with Greek yoghurt, which grants the same taste but with more protein. 

If you’re a keen baker like me, then this one’s for you! These healthy muffins are fluffy, moist and delicious if followed the instructions carefully  I can guarantee that most of you won’t be able to guess that this recipe is 100% whole wheat and minimal sugar…

  • Bananas (3 medium sizes) OR Blueberries (200g) OR Bran (2 cups)
  • Two cups whole wheat flour
  • One teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ⅓ cup melted coconut oil OR extra-virgin olive oil
  • 2 tsp honey
  • Two eggs, preferably at room temperature
  • One cup plain Greek yoghurt
  • Two teaspoons vanilla essence

INSTRUCTIONS:

STEP 1: Preheat the oven to 100 degrees celsius. Grease all twelve cups on your muffin tin with butter, coconut oil or cooking spray.

STEP 2: In a large mixing bowl, mix one ¾ cups of the flour with the baking powder, baking soda and salt. Mix them with a whisk.

STEP 3: In a medium mixing bowl, merge the oil and honey and beat with a whisk. Add the eggs and make sure to beat well, then add yoghurt and vanilla essence. Mix well. (If the coconut oil solidifies, gently warm the mixture in the microwave in 30-second rounds.)

STEP 4: Empty the wet ingredients into the dry and mix with a big spoon, just until combined. In a small bowl, toss the blueberries /bananas/bran. Lightly fold the blueberries/banana/ into the batter. The mixture will be thick, but don’t stress.

STEP 5: Divide the batter evenly between the 12 muffin cups. Bake the muffins for 15 to 20 minutes, or until the muffins can withstand a toothpick inserted into a muffin comes out clean.

STEP 6: Place the muffin tin on a cooling rack to cool. You might need to run a butter knife along the outer edge of the muffins to loosen them from the pan.
